This delicious recipe came from my super-talented friend, Kim. I am a chicken salad lover and this one is awesome!!
4 c. cooked chicken, diced
1 c. diced green pepper
1 c. chopped celery
1/4 c. chopped green onion
*Mix above ingredients together the night before*
The next day, add: slivered almonds, pineapple tidbits (drained well), seedless grapes (cut in half). Add to chicken mixture just before adding dressing.
1 c. mayo
1/4 c. whipping cream (whipped)
1 tsp. salt
1/8 tsp. pepper
1 tsp. chicken granules (boullion cubes)
Mix mayo, chicken granules, salt and pepper together the night before.
Add whipped cream to dressing and mix well. Add to chicken mixture just before serving.
This is fabulous on croissants!!
