Zucchini Penne Pasta Bake


3 small zucchini's
2-3 tablespoons olive oil
1 tablespoon minced garlic
1 box penne Rigate pasta
1 jar of your favorite spaghetti sauce
2 cups shredded mozzarella cheese
1/2 cup Parmesan cheese (optional)

In a large pot boil penne pasta. Pre-Heat oven to broil setting. Saute sliced zucchini in olive oil, minced garlic until golden brown. Add spaghetti sauce to browned zucchini and heat up mixture. Drain cooked penne pasta noodles and place in a 9x13 baking dish. Pour zucchini/spaghetti sauce mixture. Sprinkle mozzarella cheese on top. Add Parmesan cheese if desired. Broil until cheese is golden brown and bubbly.
