Tomatillo Pork Chilli

This is a recipe from Good Things Utah


Ingredients:

1 Onion – Chopped
2 Tablespoons Vegetable Oil
Brown onion on stovetop in large pot.
2 pounds smoked pork loin – diced (chicken, or roasted pork can be substituted)
3 cups water – adjust to just cover pork in pot
After onion is cooked, add pork and water and let simmer
2 28 oz. cans whole tomatillos (chopped or pureed in food processor)

2 7 oz. cans diced green chilies
¼ cup lime juice
1 Tablespoon Cumin
2 teaspoons black pepper
2 teaspoons chili powder
1 teaspoon garlic powder

Add remaining ingredients to pot and let simmer on low for 1 to 2 hours. It will reduce down and the pork should break down and be very soft. Seasonings can be adjusted to taste as needed.
