Brown Sugar Meatloaf

Kim and I discovered this meatloaf a couple years ago. It is a favorite of both of our families. Serve with baked potatoes for a meal, or I was thinking Jamie's Ranch Potatoes would go well with it.

1 1/2 lbs. lean ground beef
3/4 c. milk
2 eggs
1 1/2 tsp. salt
1/4 tsp. black pepper
1 sm. onion, chopped
1/4 tsp. ginger
3/4 c. finely crushed saltine cracker crumbs
1/2 c. packed brown sugar
1/2 c. ketchup

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  2. In a mixing bowl, mix thoroughly all ingredients except brown sugar and ketchup and shape into a loaf.
  3. Put brown sugar on top of the loaf, and then the ketchup on top of that, spreading evenly to cover brown sugar.
  4. Bake in preheated oven for 1 hour or until juices are clear.

  2. This one is so good!!! I do it for freezer meals and it turns out so good!!
