Sesame Chicken Pasta Salad

This one is a yummy summer favorite! Maybe it would make one of these cold winter days feel a little warmer!!

6 oz. uncooked spiral pasta
1/4 c. reduced-sodium soy sauce
1/3 c. white wine vinegar OR cider vinegar
2 Tbsp. canola oil
2 Tbsp. sugar
2 Tbsp. sesame seeds, toasted (I just use the ones you buy in the spice section)
1/2 tsp salt
1/4 tsp. pepper
3 cups chopped, cooked chicken breast
2 cups torn fresh spinach
1/2 cup sliced green onions
1/4 cup minced fresh parsley (optional)

Cook pasta according to package directions. In a jar with a tight-fitting lid, combine the soy sauce, vinegar, oil, sugar, sesame seeds, salt and pepper; shake well. Drain pasta and rinse in cold water; place in a bowl. Add chicken and half the dressing; toss to coat. Cover and refrigerate for at least 4 hrs. Set aside remaining dressing.
Just before serving, add the spinach, onions, parsley, and remaining dressing; toss to coat. Yields: 8 servings

1 serving (1 cup) = 181 calories, 7 gram fat (1 g. saturated fat), 11 g. carbs, 1 g. fiber, 19 g. protein
