Bacon Bleu Burgers

  • 1 pound ground turkey
  • .67 cups bacon crumbles (approximately 3 oz)
  • .33 cups bleu cheese crumbles
  • Optional – extra bleu cheese crumbles for melting on top

Directions:

Cook bacon in 400 degree oven on a cookie sheet for 15-20 minutes, or until crisp. Remove, allow to cool and chop in food processor. In a large bowl, mix together all of the ingredients until well incorporated. Make a large ball of the meat and then divide into fourths. Make 4 quarter pound hamburger balls and then mold into patties. Cook on hot grill for 3 minutes on each side or until hamburgers are cooked to desired doneness. Serve on buns with additional toppings if desired.

Freezing Directions:

You can make up these hamburgers and freeze them using sheets of wax paper to divide them and then place them in freezer bags. To serve: Thaw. Cook on hot grill for 3 minutes on each side or until hamburgers are cooked to desired doneness. Serve on buns with additional toppings if desired.

Healthy Raw "Cookie dough" bites!


My family LOVES these things, and they are healthy and delicious!! You gotta give them a try. I used raw peanuts instead of walnuts, and it gave it a peanut butter taste to it!! MMMMM

Ingredients
  • 2/3 cup raw almonds
  • 2/3 cup raw walnuts
  • 2/3 cup raw oat flakes (see note below)
  • 1/4 tsp ground cinnamon
  • 1/8 tsp sea salt
  • 1/4 cup raw agave nectar or honey
  • 2 tsp pure vanilla extract
  • 3 tbsp cacao nibs or dark chocolate chips
  • 1/2 cup coconut
Instructions
  1. In a food processor, process the almonds, walnuts, oats, coconut,  cinnamon and salt to a fine meal.
  2. Add the agave nectar/or honey and vanilla and process to combine.
  3. Next, add the cocoa nibs (or chocolate chips) and pulse just to combine.
  4. Roll the cookie dough into balls (about 1 tbsp each) and place them on a cookie pan lined with parchment paper. Place the pan in the freezer for about an hour to firm up. Store balls in a tightly covered container in the freezer.
Notes
Raw oat flakes can be substituted for regular rolled oats (or certified gluten-free oats, if necessary), but if you want this treat to be truly raw, look for raw oat flakes, which haven't been steamed or toasted during processing.

Cinnamon Swirl Banana Bread


For the bread:

  • 3 over-ripe bananas, smashed up
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • dash of salt
  • 1 1/2 cups flour (I use GF blend)

For the swirl:

  • 1/3 cup sugar
  • 1 Tbs cinnamon
  1. Preheat oven to 350. Butter and four a loaf pan. Mine was 9 x 5, but you could use any sort, I suppose. Just keep a close eye on it in the oven, and adjust the time as needed
  2. Mix bananas, butter, sugar, egg, and vanilla together. sprinkle baking soda and salt around on top of the banana mixture. Then gently stir in flour. Be careful not to over-mix!
  3. In a small dish, mix together the 1/3 cup sugar and 1 Tbs cinnamon.
  4. Add 1/2 of the batter to the loaf pan and then sprinkle half, or a little more than half of the cinnamon-sugar mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
  5. Bake for 50-60 minutes, but remember, if you’re using a different-sized loaf pan, be careful and keep a close eyeball on it!

Dijon-Roasted New Potatoes

I made this with dinner tonight and it was a hit!! It is a Weight Watchers recipe....so it is yummy AND healthy!!

1 spray cooking spray
2 Tbsp. dijon mustard
1 tsp olive oil
3/4 tsp paprika
1/2 tsp salt
1/4 tsp dried thyme
1/4 tsp black pepper
1 1/2 lb uncooked new potatoes, red or white, quartered or halved

Preheat oven to 425°F. Coat a 9- X 13-inch baking dish with cooking spray.In a large bowl, whisk together mustard, oil, paprika, salt, thyme and pepper; add potatoes and stir to coat.Transfer potatoes to prepared baking dish and roast 15 minutes; stir and roast until tender on inside, about 15 to 20 minutes more. Yields about 1 1/4 cups per serving.(4 servings)

Zippity-Do-Dah Chicken!

Oh my stars and garters!! Made up a yummy,fast chicken for dinner today! Now to see if I remember it!

5 Chicken breasts
1 1/2 cups Fat free mayo
1/2 cup reduced fat parmesan cheese
1/2 cup milk
1 packet dry italian dressing seasoning(GF) Look for GF if doing GF.
1/2 jar sun dried tomatoes chopped

Mix up ingredients and pour over chicken in a 9x13 dish. Bake at 350* for 30-45 min. Would be great in crockpot as well(probably low for 6-8 hours. The sauce we put over mashed potatoes. Zippy and yummy and healthy!

Monkey Squares (with browned butter frosting)


This is to die for!! A great way to use up those over-ripe bananas, and my little monkeys love them! I found this recipe on one of my favorite food blogs.

1 ½ cups sugar
1 cup sour cream
½ cup butter, softened
2 eggs
1 ¾ cups (3 or 4) ripe bananas, mashed (If I don't have enough ripe banana, I substitute the rest with applesauce)
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
¾ teaspoon salt
½ cup chopped walnuts (optional)

Heat oven to 375 degrees. Grease and flour 10x15 jelly roll pan. Beat first four ingredients until creamy. Blend in bananas and vanilla one minute. Add dry ingredients and blend one minute. Stir in nuts and spread in pan. Bake 20 to 25 minutes until golden brown. Frost with Browned Butter Frosting immediately as the frosting is easier to spread on the warm cake. (recipe below).

Banana bread option: Instead of spreading into jelly roll pan, this recipe will make about two regular loaves of banana bread, or about four small loaves. Regular loaves bake about 45 minutes at 350 degrees. Small loaves will bake about 25 minutes on 350.

Browned Butter Frosting
½ cup butter
4 cups powdered sugar
1 ½ teaspoons vanilla
about 3 tablespoons milk or half and half

Heat butter in saucepan over medium heat past the melting point until it boiling, and a delicate brown. Remove from the heat and immediately add the remaining ingredients. This should be thicker than a glaze and thinner than frosting. Using a spatula smooth over the top of the Monkey Squares immediately. The frosting will be easier to spread once it's on the warm bread.
